Though many critics of craft beer will claim that hazy IPAs and Pale Ales look the same, there is a very clear and distinct difference between middle tier and high quality production.The carbonation in Photon was better than most of the other Equilibrium beers that I have recently sampled. I also picked up some nice notes a pine/resin that has come to define the Equilibrium beers that I have tasted (see tasting notes for Intermediate Dance Moves, Fluctuation Wave, and Vulgar Display of Flower).

Typically the aroma gives away heavy handed use of vanilla, but I had a good feeling about Equilibrium’s use with this beer. At Noon today, we are selling our version of All Together (6.5 % IPA) at $16 per 4-pk. It pours a very hazy orange, releasing well-blended notes of apricot, tangerine, peach, mango, and pineapple. I also thought that the mouthfeel lingered a little longer than I would have preferred.I picked up notes of pineapple, tropical fruit, and was impressed by the juiciness of this beer.
I also tasted a slight hint of bubblegum from the yeast esters that I felt improved the tasting experience by adding a layer of complexity, and I would not consider it an off flavor for this particular beer. Photon was very pleasantly balanced and certainly not overwhelmed by vanilla as are many beers that choose to use the fickle ingredient. Unique 20,235. It was dry, crisp, and refreshing.
